Zucchinis come into different color and shapes. In that recipe, you use some round one and stuff them with a mixture of vegetables, rice, and eggs. The result should be a meal tasty and delicious.

Ingredients

 4 round zucchini 150/175 g
 150 g small pieces of carrots,
 onions,
 peppers,
 8 large leaves of minced spinach
 220 g cooked rice
 2 egg yolks
 2 tbsp grated Parmesan cheese
 2 tbsp Vegetable oil
 Salt, pepper
 Option: a little orange zest

Directions

Cut the top of zucchinis (keep the flesh to make a soup)

Put the instant pot in mode browning

Pour the oil into the bowl

Brown the small pieces of vegetables

Add the spinach

Stop the brown mode

Empty

Add the egg yolk, parmesan and orange zest

Season

Fill the zucchinis and place them in the steam basket

Add 200 ml of water in the tank

Place the steam basket

Start cooking under pressure for 8 minutes

Keep the cooking liquid to make a soup
