Duck liver and Sauterne

Here is another way to present duck liver. After soaking in white wine with some sp[ices, you just cook it before chilling it for two days. It w ill make a really nice first course.

Duck liver and Sauterne

Ingredients

 1 duck liver
 200 ml Sauternes
 Salt, pepper
 Chili pepper

Directions

Remove the liver from the package

In a bowl mix the Sauternes, salt, Pepper and pimento

Soak the liver in it for at least 4 hours

Make sausages (not too big) by rolling in several layers of tightly wrapped baking paper

Put in the steam basket

Add 200ml of water

Put the instant pot in quick cooking mode 17min

Once the cooking is finished, soak them immediately in cold water with ice cubes

Put them in the fridge for 48 hours before serving (keep them in the plastic film
