Cream of scallops and its shallots compote

Here is a fancy recipe of cream of scallops served with a compote of shallots. It is an interesting and different combination that should delight your guest.

Ingredients

 CREAM
 400 g scallops
 2 eggs
 200 ml cream
 Butter
  Salt, pepper
 COMPOTE
 4 shallots in thin rings
 2 tbsp sugar
 1 tbsp balsamic vinegar

Directions

FOR THE CREAM

In a blender, mix the scallops, egg yolks, cream, salt, and pepper

Beat the eggs until fluffy and add them to the mixture

Fill your buttered ramekins

Put the ramekins in the steam basket with 200ml of water in the tank

Pass the instant pot in pressure cooking 5min

COMPOTE

Put the instant pot in mode browning

Add in the hot bowl, butter, sugar, and vinegar

Add the shallots

Let simmer a few minutes
