Pork and eggplant (bringelle)

This is a good recipe to prepare if you have a lot of eggplants at your disposition. The pork is mixed up with eggplants, onion, garlic, and a tomato. Some strong spice will flavor it just great.

Ingredients

 4 slices of choped porkchops
 2 minced onions
 3 crushed garlic cloves
 1 small piece of ginger
 1 diced tomato
 1 sprig of thyme
 2 pinches of saffron or turmeric
 3 eggplants in pieces
 Salt, pepper
 250 ml water

Directions

Put the instant pot in mode browning

Fry the meat with a little salt and pepper

Add the onion

Mix the garlic and ginger before adding it to the meat

Add the tomato, turmeric and thyme sprig

Fry a little

Add the eggplants

Add the water

Put the instant pot in pressure cooking mode 20min
