Beef kidney with mushrooms

Ingredients

 7 medium potatoes peeled
 400 g of beef kidneys
 200 g of fresh or canned mushrooms
 1 onion, minced
 200 ml of cream
 100 ml of veal stock
 100 ml of red wine or port
 8 tsp of sauce thickener

Directions

Soak the kidneys in cold water with salt 30min

During the soaking time, steam the potatoes 28min with 200ml of water.

Dry the kidneys

Remove the potatoes

Clean the vat

Put the instant pot in mode browning

Fry the kidneys, onion and mushrooms in a little olive oil

Add the fresh cream, veal stock, and alcohol

Switch the instant pot to quick cooking mode 15min

At the end of cooking add the sauce and diced potatoes

Switch the instant pot to heating mode 5min
