This is a different approach to making a soup. In that recipe, coral lentils will be mixed up with curry paste and coconut milk. It should be a very special tasting dish.
Ingredients
250 g of Coral lentils
1 tbsp yellow curry paste
400 ml coconut milk
3 zucchinis in slices (peel 1 slice out of 2)
1 stick of lemongrass crushed and cut into 4
Minced parsley
600 ml water
Directions
In the tank of the instant pot put the curry, zucchinis, water, and lemongrass
Put the instant pot in pressure cooking 10min
At the end of cooking, remove the lemongrass
Add the coconut milk
Salt, pepper
Serve with parsley
