Stuffing birds are fun because you can use anything you want and it will always come out good. It really enhances the whole dish and that recipe mix plums and apples for the stuffing. Try it.

Set the instant pot in browning mode
While preheating, mix the ginger with butter in a bowl
Brush the quails
Cut the apple into cubes
Cut the pitted plums in half
When the instant pot is hot, add a little ginger butter and brown the apple and plums pieces with salt and sugar for 5 min
At the end of the 5min, remove the filling and replace with quails
Brown on all sides for 6min
Remove the quails and garnish them with apples and plums
Put the onion to brown 3 min
Add the rest of the filling
Add the water and the chicken bouillon
Put the quails on top
Put the instant pot in pressure cooking mode 13min
At the end of cooking, remove the quails and let the juice reduce to make a thick sauce
Put the quails on the compote and serve with peas
