This is a hodgepodge of vegetables in an Asian style. All these different ingredients will be mixed with rice. Indian spices will complete the preparation giving a lot of taste to the dish.
Ingredients
200 g Basmati rice rinsed well in cold water
1.50 pinches of saffron powder
3 tbsp Indian spice mixture
20 g peeled pistachios
2 tbsp peanut oil
200 g eggplant in cubed
1 red onion, slices
150 g green beans cut into 3
100 g frozen peas
40 g raisins
Directions
Put the instant pot in mode browning
Pour the oil into the bowl
Add the spices and eggplant
Fry 5min
Add the onion, beans, raisins, and peas
Cook 2 min
Salt
Remove
Pour the rice into the bowl with twice its weight in water
Add the saffron
Put in mode pressure cooking 5min
