Caribbean chicken Colombo

 4 beautiful chicken legs
 6 crushed garlic cloves
 1 minced shallot
 1 minced onion
 4 sticks of parsley cut
 1 sprig of thyme or a small bouquet garnished
 1 crushed chili pepper
 2 tbsp Colombo powder
 1 zucchini cut into 4
 1 eggplant cut into cubes
 3 potatoes cut into large cubes
 The juice of a lime
 150 ml coconut milk
 1 tbsp coriander and anise oil
 oil
 1 glass white vinegar
 Salt, pepper

Marinate the chicken for 1 hour in a closed container with all ingredients EXCEPT coconut milk

Put the chicken and marinade in the bowl

Add 200ml of water

Put the instant pot in quick cooking 15min

At the end of cooking, add the coconut milk
