There are a lot of different pumpkins available. Some are better suited for soups than others. The pumpkin called chestnut pumpkin is really good in soup. Actually, it got its name because the taste reminds you of chestnut

Ingredients

 4 slices of foie gras of 50g each
 600 g of peeled pumpkin, seeded, cubed
 2 chopped shallots
 400 ml of poultry broth
 2 pinches of nutmeg powder
 200 ml of liquid cream
 Salt, pepper

Directions

Put the instant pot in mode browning

Season the slices of goose liver

Make small slices on one side of them with the tip of a knife

Fry the liver 30 sec on each side

Remove from the vat and set aside

Empty just a little bit of fat and fry the shallots, pumpkin in the rest of the fat for 1min

Add the chicken broth and nutmeg. Salt and pepper

Pass the instant pot in pressure cooking 7min

Mix with the cream

Serve in soup plates with the slice of goose liver on top
