How about a nice chicken and potatoes meal in a thick sauce made of cream? It sounds good and it's simple to prepare. Some soft cheese will be added to make an even better sauce.

Ingredients

 1 kg chicken breast cut into slices
 potatoes cut into large pieces
 2 shallots, minced
 200 ml half thick cream
 ½ soft cheese reblochon
 1.50 l water
 1 cube poultry bouillon
 Salt and pepper
 3 tsp mustard

Directions

Put the instant pot in mode browning

Fry the chicken and shallot

Add the potatoes, water with the poultry cube, salt, pepper, and cheese

Put the instant pot in pressure mode 12min

At the end of the cooking add the cream and mustard
