This is a recipe as a first course for a holiday or anniversary that will delight your guest. Everybody appreciates goose liver and the addition of figs will give it a unique touch. It should be a real success.

Chunk of goose liver with figs

Ingredients

 250 g goose liver
 370 ml milk
 6 figs cut into 8
 40 g red onion, minced
 2 tbsp sunflower oil
 Salt and pepper

Directions

Marinate the goose liver 4 hours in milk

Make a sausage with the goose liver 5cm in diameter and place it in the freezer so that it is very cold

Put the instant pot in mode browning

Fry the onion

Add the figs and 50 ml of water

Season to taste as you wish

Let in brown mode 5 min

Keep in a cool place

Put 200 ml of water in the tank

Place the goose liver in the steam basket and put it in the tank.

Switch the instant pot in pressure cooking 6min

Cool the goose liver with water and place it in the fridge 2 days

Serve it with figs and onion
