Usually, the cream with the caramelized top is sweet. In that case, it is a little bit different. You use goose liver for the cream and put the sugar on top. An interesting version worth trying.

Mix the goose liver with the fresh cream
Add the egg yolks, the pepper
Remix until you obtain a smooth cream
Put in ramekins and cover them with special cooking film
Put in the steam basket with 200ml of water in the tank
Switch to pressure cooking 10min
At the end of cooking take out the film and put the brown sugar
Caramelize the brown sugar with a food burner or by passing to the oven grill
