Here, we have a nice salad of eggplant with shallots, and eggs for a nice change. It's quick and simple to prepare and should e enjoyed by everybody.
Ingredients
2 hard-boiled eggs in thin slices
4 eggplants in small cubes
4 shallots
Salt, pepper
Balsamic vinegar
Olive oil
150 ml water
Directions
Put the instant pot in browning mode
Brown the eggplants 2min in a little oil
Add the water
Put the instant pot in pressure cooking mode 6min
Let it cool in a bowl
Add the egg slices
Salt, pepper
Add the shallots
Put the vinegar just before serving
