Express paella and chicken

This is a dish of paella with summer smell and flavor. Chicken and rice will be mix with sun vegetables like eggplant, pepper, and zucchini. A dash of pimento to enhance the taste of the whole dish.

Ingredients

 300 g chicken breast cut into cubes
 2 cups 12cl rice
 4 cups chicken broth
 1 onion
 1 crushed garlic clove
 1 red pepper in slices
 1 carrot in rings
 1 small eggplant in pieces
 1 medium zucchini in pieces
 Olive oil
 1 tbsp pimento or paprika
 ½ tbsp saffron
 Salt
