Put the chicken pieces in the steam basket with 200ml of water in the tank
Put the instant pot in pressure cooking mode for 10min
Set aside in a dish (do not empty the water from the tank)
Put the steam basket back together with the potatoes
Put the instant pot in pressure cooking 8min
Set aside
Empty and dry the tank
Put the instant pot in mode browning
Fry the onion and shallot in a mixture of butter and oil
Add the chicken (you will have to do it several times) Remove the fried pieces little by little
Put all the chicken pieces and potatoes back in the pan
Add the champagne, bouillon cube and mustard
Salt, pepper
Put the instant pot in pressure cooking 18min
At the end of the cooking add the mushrooms, saffron, and cream
Put the chicken and potatoes back in pressure cooking 2min
Remove the chicken and potatoes
Add the cornstarch in the sauce and put the instant pot in browning mode until the sauce thickens
