How about some fried pork with vegetables and boulgour? You can also use some fresh vegetables for that recipe if you have some around. The boulgour is a type of wheat quickly cooked.

 500 g pork stew
 1 minced onion
  Sichuan pepper
 1 tbsp oil
 1 tbsp mustard
 3 tbsp tomato sauce
 1 tbsp of thyme
 250 ml of poultry broth
 300 ml water
 200 g bulgur
 750 g of frozen vegetables

Put the instant pot in browning mode

Brown the onion and meat 10min

Add the broth, mustard and tomato sauce

Add the pepper and thyme

Put the instant pot in pressure cooking mode 15min

Add the vegetables, bulgur, and water

Put back in pressure cooking 8min
