You may want to try the goat meat for a change. It will be marinated before being cooked in coconut milk with a bunch of spices. It will take a little while to get it done but the result will be worth it.

Goat meat curry

 1 kg boneless goat meat
 1 lime juice
 1 tbsp salt ground pepper
 1 small pepper, seeded and minced (regardless of color
 ½ tbsp dried thyme
 ½ tbsp four spices
 3 tbsp curry powder
 2 sprigs chives,
 1 onion minced
 3 cloves garlic minced
 4 tbsp vegetable oil
 3 crushed tomatoes
 1 can coconut milk
 250 ml water

Directions

Rinse the meat, put it in a bowl and sprinkle it with the juice of 1/2 lime

Salt, pepper

Add the chili, thyme, four spices, curry, chives, onion, and garlic

Marinate in the refrigerator for at least 2 hours

Put the instant pot in mode browning

Fry the meat in hot oil for 6 minutes (keep the marinade in a bowl)

At the end of cooking, sprinkle with the rest of the lemon juice

When the meat is golden, add the marinade and cook 2 minutes more

Add the tomatoes, coconut milk and 250ml of water

Put the instant pot in pressure cooking mode 30min

At the end of cooking, sprinkle with the rest of the lime juice
