Interlarded rabbit

This is an interesting and unusual way to present a rabbit stew. You wrap some thin slice of bacon around the different part of the rabbit. This is a good way to keep the rabbit juicy. It is going to be a really good dish.

Ingredients

 1 rabbit cut into pieces
 Thin slices of smoked pork breast
 1 package of bacon
 1 onion
 A can of mushroom
 1 handfull of plums
 4 potatoes
 4 carrots
 400 ml white wine
 500 ml veal stock
 Olive oil
  Paprika
 Parsley
 Salt, pepper

Directions

Wrap the rabbit pieces with the smoked breast and hold them with a toothpick

Put the instant pot in mode browning

Brown the rabbit brown in the oil

Remove and set aside

Brown the mushrooms, bacon and chopped onion

Put the rabbit back

Sprinkle with flour

Add the white wine, the chopped potatoes, the carrots in rings, the prunes and the spices

Add a little water if necessary to cover the preparation

Put in quick cooking 7min
