A really nice way to present lamb roast is with a nice thick creamy sauce made of Roquefort. A little bit of curry will flavor it just perfect.
Ingredients
600 g lamb filet mignon
250 ml veal stock
200 ml fresh cream
125 g Roquefort
1 tbsp curry
Salt, pepper vinegar
Directions
Put the instant pot in mode browning
In a bowl, mix the cream and Roquefort
Brown the lamb on all sides
Salt, pepper
Add the curry
Deglaze with the vinegar
Add the veal stock
Put the Roquefort mix with cream in the bowl
Switch the instant pot in pressure cooking mode 15min
