Ingredients
600 g pork tenderloin, in cubes
600 g pumpkin, in cubes
265 ml coconut cream
⅔ tbsp pimento powder
2 tbsp fresh Ginger in strips
2 tbsp Nuoc-Mam sauce
1 tbsp chopped mint
2 tbsp curry powder
2 tbsp peanut oil
Directions
Put the instant pot in mode browning
Pour the oil into the bowl
Add the curry and chili pepper
Fry the meat on all sides
Add the coconut cream, ginger and pumpkin
Mix
Start cooking under pressure for 9 minutes
