This is a dish of quails decorated with some apricot around the bird. The presentation should be very pretty and everybody is going to admire it. It is going to taste good as well.

Soak the pork lace fat in iced water for 1 hour
Salt and pepper the quails
Squeeze the pork lace fat, unfold it and cut it into 4 squares
Cover the quails with half apricots to make a shell of scales
Wrap the quails with the square of pork lace fat to keep the apricots in place
Put the instant pot in mode browning
Brown the quails on each side in the butter
Add the liquid with the cube of bouillon
Switch the instant pot in pressure-cooking mode 15min
