This is a version of the quails with a sauce containing some rosy wine. You may share the rest of the bottle of wine with your guest when the quails are ready to eat.

 4 quails
 olive oil
 1 onion, minced
 150 ml rosy wine
 1 tbsp old-fashioned mustard
 100 ml water
 1 box of mushroom mixture
 200 ml poultry broth

Put the instant pot in mode browning

Brown the quails and onion with oil

Add the wine, water, mustard, salt, pepper, broth, and mushrooms

Put the instant pot in pressure cooking mode 10min

You can thicken the sauce with cornstarch if you wan
