Risotto of king prawns and clementines

Ingredients

 280 g rice for risotto
 1 onion, minced
 560 ml fish stock
 80 g grated parmesan cheese
 28 shredded shrimp tails 12/16 raw and peeled
 4 tbsp olive oil
 60 ml whisky
 4 clementines keep only the zest and supreme
 2 tbsp mascarpone
 1 tbsp chopped flat parsley

Directions

Put the instant pot in mode browning

Season the prawns

Fry the prawns in 2 tablespoons of oil 1 minute on each side

Deglaze with whisky

Take them out and reserve

Add 2 more tablespoons. of olive oil and put the onions and rice

Fry

Add the broth and zest of the clementines

Put under pressure 6min

At the end of cooking, put the prawns, and the supremes of clementines

Add the mascarpone

Mix well

Sprinkle with parmesan and parsley on the plate when ready to serve
