Risotto with mushrooms and white wine

There is no reason why your weight watchers friends could not enjoy a good risotto! In the following recipe, rice will be mixed up with mushrooms before being cooked with bouillon and wine.

 ½ onion or 1 small onion
 2 tbsp olive oil
 500 g frozen mushrooms
 210 g rice for risotto
 50 ml white wine
 500 ml water 1 heart of poultry broth
 80 g soft light cheese
 Salt, pepper

Put the instant pot in mode browning

During the preheating slice the onion

Put the oil in the tank, and fry the onion

Then add the rice and fry until it becomes translucent

Put the mushrooms still frozen and the white wine, salt and pepper

Continue to brown until the white wine and mushroom water evaporate

Add the broth and water

Then mix well

Switch the instant pot to pressure cooking mode 15min

At the end of cooking incorporate the cheese, stirring so that it melts
