Rooster, wine and cognac

This is a very popular dish to fix for a celebration. The recipe is about a rooster in a thick tasty sauce. You can serve it with some potatoes, rice or whatever seems fit for the occasion.

Ingredients

 1 rooster
 1 bottle of wine
 Garlic,
 Pepper seed
 Carrots in rings
 1 onion + 1 for the marinade
 Oil
 Cognac
 Salt and pepper
 Thyme
 Bay leaf
 Cloves
 1 package of bacon
 Mushrooms
 Cornstarch

Directions

The day before put the rooster in the red wine and all the ingredients except the bacon, mushrooms and, cornstarch

The same day take the rooster out of the marinade (do not discard the marinade)

Put the instant pot in mode browning

Brown the rooster and reserve

Brown onion and the bacon

Add the rooster

Add the wine from the filtered marinade and the mushrooms

Put the instant pot in the mode quick cooking 30min

Put the instant pot in mode browning

Add the cornstarch to thicken the sauce
