Salmon roast stuffed with scallops and Champagne sauce with mushrooms

The title looks long and fancy but the actual preparation of the dish is not complicated. The salmon is already stuffed and you just have to cook it with other ingredients and make a sauce.

Ingredients

 1 roast salmon stuffed with scallops
 300 ml of champagne
 400 g of mushroom
 100 ml of fish stock
 2 minced onions
 2 minced shallots
  Salt, pepper
  Parsley chopped
 1 tbsp flour
 250 ml thick cream

Directions

Put the instant pot in browning mode

Brown the onions, shallots, and parsley in a little oil

Pour in the flour

Mix well

Add the champagne

Salt, pepper

Let simmer 5min

Put the salmon in the steam basket and put it on the preparation

Cook under pressure 10min

At the end of cooking, add the fresh cream to the sauce and the sauce thickener if necessary

Mix well and leave in browning mode to thicken the sauce
