This is going to take a little time to fix but the result should be really good. Here, you will make a dough to wrap around the scallops. A leek compote will accompany the scallops.

Ingredients

 Scallops in their shell (open)
 2 medium egg whites
 120 g flour
 120 g leek whites finely cut
 2 tbsp aniseed alcohol
 200 ml liquid cream
 2 tbsp oil
 2 tbsp butter

Directions

Make a dough with the egg white and flour

Form a sausage around the shell

Close them and weld the edges with the dough

Put the instant pot in mode browning

Pour the oil and butter into the bowl

Add the shallot, leek, and alcohol

Cook the vegetables until done

Stop browning

Add cream

Mix

Place over the steam basket filled with shells

Start cooking under pressure 2min Serve scallops in the shell with leek compote
