800 g eggplant, diced
1 lemon juice
1 rosemary, sprig
100 g black olives Greek style
1 onion, minced
2 tbsp sugar
2 tbsp Vegetable oil
Salt, pepper
50 ml water
Directions
Put the instant pot in mode browning
Pour the oil into the tank
Fry the onion
Add the eggplants and cook for 5 minutes
Stop browning mode
Add all the ingredients in the tank, as well as the water
Season
Mix Start cooking under pressure for 1 minute
