St Jacques stew style cassolette

Ingredients

 15 St Jacques
 10 shrimps peeled and cut into 3
 1 shallot, minced
 20 g butter
 100 ml fish stock
 2 egg yolks mixed with 80gr fresh cream
 100 ml white wine
 Salt, pepper
 Sauce thickener
 Breadcrumbs

Directions

Put the instant pot in mode browning

Sauté shallot, and mushroom in butter

Add scallops and shrimps

Brown mode for 1min

Add fumet and white wine

Add egg/cream mixture

Add sauce thickener

Leave in mode browning until sauce thickens

Turn off the instant pot

Put in ramekins with breadcrumbs on top

Brown a little in the oven
