Tripe in a style from Caen

This is more a mixed up of tripe, vegetables, beef, and veal shanks bones. A lot of spices also to enhance the preparation. The result should be a very tasty dish.

Ingredients

 2 kg of tripe ready to cook
 1 shank of beef and veal cut into 4
 2 minced onions
 1 roll of pork rind in pieces
 2 cut leek whites
 3 cut celery stalks
 1 minced garlic clove
 2 cloves
 Salt, pepper
 1 bouquet garnished
 2 tbsp Calvados
 1 l of raw cider
 1 pinch of cayenne pepper

Directions

Put the tripe in the tank of the instant pot

Add 2 liters of boiling water

Switch the instant pot to pressure cooking 5min

At the end of cooking, drain and rinse the tripe

Clean the tank

Cut them into large pieces

Put all the ingredients in the tank

Switch the instant pot to pressure cooking 1h20

At the end of cooking, remove the bones before serving
