This is a favorite in the cream specialty. You put the cream on top of some caramel. When you serve it you turn it over. It is very good and tasty. A nice way to finish a good meal.

In a large bowl:
Mix the egg and sugar.
Add the milk and a little orange and lemon zest.
Divide the caramel into ramekins.
Pour the mixture over the caramel.
Cover with special cooking film and place them in the steam basket.
Pour 20 cl of water into the tank.
Start cooking under pressure for 6 minutes.
Put 12 hours in the refrigerator.
