Veal breast roast with Mirabelle

This is a good recipe for a summer day when there are a lot of Mirabelles available. A veal roast well marinated will be served with fruits covered in a great sauce full of flavors.

 1.50 kg of veal breast roast
 750 g of Mirabelles
 2 sliced onions
  Butter
 Oil
 5 ml of Mirabelle plum alcohol or cognac
 Brown sugar
 200 ml of vinegar
 Salt and pepper
 MARINADE
 250 ml of dry white wine
 Garlic
 Thyme
  Bay leaf
 Oil
 Ground pepper

Prepare the marinade

Pour it over the veal and leave to marinate for 4 hours.

Remove from the pan 30 minutes before cooking.

Drain and set aside (keep the marinade)

Put the instant pot in mode browning

Fry the meat with the onions

Put the meat in a dish, pour the alcohol on top and blaze it

Put it back in the tank, sprinkle with brown sugar, add vinegar

Add the marinade

Put the instant pot in pressure cooking mode 30min

Add the drained Mirabelles

Put the meat back in pressure cooking 15min

Remove the meat

Reduce the sauce

Add 10cl of fresh cream
