In season, wild boar cooked with some good spices will taste great. In that recipe, the wild boar in marinated in some wine with herbs. Next day you cook the meat with some vegetables and cover it in a thick flavored sauce

Wild boar stew

Ingredients

 1.30 kg wild boar
 530 g carrots in slices
 350 ml red wine
 1 onion, minced
 Thyme
 salt, pepper
 620 g potatoes in large pieces
 1 tbsp olive oil
 150 ml beef broth
 2 tbsp Cornstarch

Directions

The day before, you prepare the marinade

Cut the meat into 25g pieces

Mix the red wine, onion, thyme, carrots, salt and pepper

Leave in the fridge 24 hours, stirring 3 times
The next day

Put the instant pot in mode browning

Remove the food from the marinade (keep the juice) and brown it in a little oil

Add the potatoes

Let it brown 10min

Add the juice from the marinade and the broth

Switch the instant pot to pressure cooking mode 35min

Drain

Put the juice back in the instant pot and dilute the cornstarch

Make it thicken in brown mode 3min

Cover the food with the sauce
